Ingredients
makes 4-6 medium glasses
•2 large eggs
•100g caster sugar
•10cl lemon juice
•1 teaspoon cornflour
•4 plain yoghurts (100g each)
•100g blackberries sprinkled with caster sugar

Verrine of blackberry and lemon curd
Preparation
1.Beat the eggs with the sugar. Dissolve the corn flour in the lemon juice and then add it to the egg mixture.
2.Heat the mixture over a medium heat until it thickens. Leave the lemon curd to cool.
3.In the 4 glasses, put a layer of blackberries then alternate layers of yoghurt and lemon curd.
4.Add some fresh blackberries and mint sprigs.
5.Serve cold.
You could replace the blackberries by raspberries, blueberries or a mix of what the French called “fruits de la forêt” (fruits commonly found in the forest)
A beautiful verrine which is easy to prepare (approx 15 minutes) and will delight your guests at dessert time!

About Verrines
In France, verrines are very fashionable. Savoury or sweet, their interesting and sometimes original colours delight your guests. They are beautiful to look at and delicious to savour!
For canapes use shot or espresso glasses, for a bigger dessert try using a wine glass or an originally shaped water glass ... you can even use jam jars!
As there are no limits to the mixture of flavours and colours, everything is possible... create and invent!
